Step 1: Preheat the oven at 180 degrees Celsius.
Step 2: Loosen the skin from the breast and the wing by inserting fingers, gently pushing between the skin and the meat.
Step 3: Insert the truffle slices under the loosened skin over the breast and the wing. Rub with olive oil, salt, and pepper, and sage leaves.
