Roast Chicken with Black Truffle

Roast Chicken with Black Truffle

(Serves 4)

Ingredients

 
  • Bendele Farm fresh organic chicken
  • Fresh black truffle, sliced, OR our 80g jar of “Bacol” shaved truffles
  • salt
  • freshly ground black pepper
  • 8 fresh sage leaves
  • 3 tbsp olive oil

    • Method

      Step 1: Preheat the oven at 180 degrees Celsius.

      Step 2: Loosen the skin from the breast and the wing by inserting fingers, gently pushing between the skin and the meat.

      Step 3: Insert the truffle slices under the loosened skin over the breast and the wing. Rub with olive oil, salt, and pepper, and sage leaves.

      Step 4: Cook until tender – approx. 1 hour
