Hot Smoked Salmon Citrus Salad

Hot Smoked Salmon Citrus Salad

Serves 3 to 4

 Ingredients

  • 200g hot smoked salmon, broken up into chunks
  • 2 small fennel bulbs, shaved, fronds reserved
  • 2 oranges, thinly sliced
  • ½ Spanish onion, shaved
  • 10 large green olives, pitted and sliced
  • 1 handful thinly sliced young celery stems and young leaves
  • 1 cup each of (loosely packed) mint and parsley, coarsely torn

Citrus dressing

  • Juice of 1 orange
  • Juice of 1 lemon
  • 60ml (1/4 cup) extra-virgin olive oil
  • For citrus dressing, whisk ingredients into a bowl. Set aside.

Combine fennel, orange, onion, olives, celery and herbs in a bowl, pour enough dressing over to coat the salad items, but not drown them, toss to combine, and scatter fish over the top. Season to taste.

You could also add thin slices of red capsicum, blanched asparagus, slices of cucumber. Choose lots of crunchy fresh salad ingredients that go well with the fish and citrus dressing.
