Moroccan Couscous Salad with Red Capsicum

Moroccan Couscous Salad with Red Capsicum

(Serves 6 as a side dish)

Ingredients 

 
  • 4 roasted capsicums, cut into slices,
  • 1 tbspn parsley, chopped,
  • 1 tbspn olive oil
  • 1 tspn capers, chopped
  • 125g couscous, prepare as per packet
  • Small container of pistachio nuts (from our nut shelves)
  • Small container of sultanas (from our nut shelves)
  • 1 lemon – lemon zest, lemon juice to moisten,
  • Lemon myrtle infused olive oil or a good virgin olive oil
  • 50g of our Egyptian dukka
  • Approx 4-5 tbsp pomegranate molasses
  • Chopped half bunch of flat leaf parsley

    • Method

      Step 1: Combine roasted capsicum, 1 tbspn of parsley, olive oil, and capers and set aside.

      Step 2: Place the cooked couscous and all the dry ingredients into a bowl, followed by the capsicum and mix well.

      Step 3: Dress with lemon myrtle olive oil, molasses, lemon zest and lemon juice, salt and pepper.
