Celebration Brie Cake

Celebration Brie Cake

(Serves 10-15 for a cheese course)

Ingredients


  • 1 whole wheel of brie – try “Fromage d’Affinois” or Australian Tarago Triple cream
  • 4 tbsp soft “Neufchatel” cream cheese
  • 2 cups pistachio nuts, shelled and chopped roughly
  • 1 punnet strawberries or seedless grapes cut length wise and marinated in:
    • ¼ cup ‘Bramble Patch’ strawberry vinegar
    • 1tspn palm sugar

    Method

    Step 1: Firstly, marinate the strawberries in the vinegar and palm sugar and set aside.

    Step 2: Cut the brie in half, so you have 2 rounds, a base and a lid. Spread half of the cream cheese on the bottom half. Then sprinkle half the nuts and all the fruit and syrup mix over it.

    Step 3: Place lid on top and spread the remaining cream cheese over and sprinkle with the remaining nuts.

    Step 4: Serve on a platter decorated with extra fruit, grape leaves or flowers.
