Why use a paste that contains water, oil and preservatives when you can make this delicious recipe at home?
LAKSA (Serves 2)
1 tbsp peanut or olive oil
2 tbsp (14g) Laksa Mix
1 small onion-chopped
500mL chicken, fish or vegetable stock
1 tsp fish sauce
400 ml coconut milk
250g chicken, tofu or seafood, sliced
100g bean sprouts
200g Asian noodles, cooked and drained
1/2 tbsp fresh Vietnamese mint, chopped (optional)
1/2 tbsp fresh coriander leaf-chopped.
Heat oil in pot, add laksa mix and stir into a paste.
Add onion, stir for 2 minutes.
Add stock (up to 750ml for a less creamy soup) and fish sauce, bring to boil.
Add coconut milk and chicken, tofu or seafood and simmer gently for 10 minutes or
until cooked.
Add bean sprouts, noodles, Vietnamese mint and coriander, heat through and serve.
