Crooked Creek - Flourless (GF) Vegetarian Christmas Pudding 400g

Replacing the Suet with Butter and carefully crafting the old recipe with Gluten Free flour and rice crumb results in this pudding being equally distinct and rich. This recipe is jubilant with fruit (56%) and Stout (10%) and Muscat.  No less than 23 ingredients jostle with each other to give layers of taste as you indulge – what celebrating should be all about.  There is no other pudding like Christmas pudding, steeped in tradition and even banned at one time in history for being too extravagant!  Already steamed by us in its basin, all that is left for you to do is gently reheat in its basin, tip out and serve as a fitting finale to your festive meal. Grandma shared her baking prowess – traditional methods and values enabling Crooked Creek to create a Gluten Free and Vegetarian pudding of which we are very proud.

Shelf Life: Minimum 1 year. You may choose to allow your pudding to mature for a number of years, stored in a dry, dark place (so if you forget it and find it, it will be beautiful).

Serving Suggestions

Serve with your favourite Christmas Accompaniments eg; brandy butter, custard, ice-cream, crème anglaise, or Zoe would say simply pure cream.

800g – serves 8 to 10 people
400g – serves 4 people

Your pudding has already been steamed to be fully cooked:

800g – 6 hours
400g – 4 hours

It only requires gentle re-heating.

For a 800g pudding:

Remove wrappings and tape from lid.

To Steam: (Preferred method):- place lidded basin in a steamer over boiling water or use a large saucepan with a trivet or upturned heat-resistant saucer.  Place basin on trivet/saucer and add boiling water to come 1/3 way up the basin.  Steam for 2 hours, topping up with boiling water as necessary.  Do not allow water to enter your pudding nor the pan to boil dry.

To Microwave: Loosen the lid and heat on full power (750W) for 5 mins and stand for 2 mins. Then 5 mins on low and stand for 3 mins.

For a 400g pudding as above but adjust times as follows:

Steam for 1 hour
Microwave: (750W) for 3 mins and stand for 2 mins. Then 3 mins on low and stand for 3 mins.

Adjust times according to your oven as appliances vary – these are guidelines only.

Store any leftovers in its Sydney made basin in fridge.
